Is it hot where you are? Let me tell you, it’s hot in South Texas. Today it got up to 90° this afternoon, and the humidity is drowning me. So what’s for supper on a night like this? Taco Salad is just the thing.
- i head lettuce, iceberg
- 2 tomatoes, chopped
- 2 avocados, diced
- 1½ C cheddar cheese, grated
- 4 green onions, chopped (or ¼ regular onion, chopped)
- 1 can Ranch Style beans, drained
- 1 lb ground beef, cooked
- 1 bottle Catalina salad dressing
- 3 C coarsely crunched Fritos
Mix the first 6 ingredients in your large bowl. Add the whole bottle of salad dressing and toss thoroughly. Refrigerate. Just before you serve it, add the warm, cooked ground beef and the crunched Fritos. Toss and serve.
I always try to cook all of the meat for the week at one time. Saves on time and effort and clean-up is much easier to do once rather than 3 or 4 times. Also, on days like this, I don’t have to do that part. I do warm it up in the m’wave a little bit.
Now, how about a yummy iced coffee to top off your supper. Early in the day, brew a large pot of strong coffee and put it in the fridge for a couple of hours. Pour the (now) cold coffee into your ½ gallon pitcher. Pour in a whole can of Eagle Brand Condensed Milk and a hearty squeeze of chocolate syrup. Stir it up well, serve in an iced tea glass over ice and with a straw. Yummm! Works for me!

When I was younger, I loved taco salad! However, I haven’t made it much myself (not sure why…). Thanks for the reminder; I need to focus more on yummy salads as it’s getting hot here!
Well, Kim, we usually have flour tortillas with most meals, that rounds it out pretty well for us, but, I do think y’all eat more than we do.
I love taco salad and could live on the stuff in the summer, but I have to ask: do these amounts really feed your crew?
We have mostly girls and this sure wouldn’t do it for us, but I hear we’re hearty eaters for a houseful of girls.

Oh, I remember “spring” in South Texas. I am not missing it at all. Michigan springs are 60′s with a few 70′s thrown in. I just planted lettuce and spinach in my garden yesterday. The danger of frost is finally over. We do a lot of salads (including taco) in the summer.
I found your blog yesterday when I was looking through the “C of H” links. I have enjoyed reading some of your past posts. That enticing picture of lettuce has got me craving SALAD!
