We are having pizza tonight! With 5 Pirates and The Princess (who doesn’t like supper unless it’s pretzels or cashews or pizza) (And no, I don’t serve pretzels or cashews for supper)(And by the way, did you ever notice that the word cashews starts with the word cash? Coincidence? I think not.)(And does there have to be a rabbit to chase in EVERY post?) What was I saying? Anyway, I think the point is that they eat alot of pizza THEY EAT ALOT OF PIZZA! So we don’t order out. That would break the bank. But we don’t have to order out because I have perfected the craft of gotten really good at making homemade pizza. It’s pretty easy, as baked items go. But there are a few tricks you’ll wanna know.

Pizza Dough for the Bread Machine

1 1/4 c. water

3 Tbsp. olive oil (you can sub. Italian Salad Dressing, yum)
1 tsp. salt
4 tsp salt
4 c. all-purpose flour
2 1/2 tsp. active dry yeast
Add ingredients to pan in order listed. Select dough setting and press start. When that is done turn the dough out onto an oiled counter top. Pre-heat the oven to 455F. Divide into 2 parts. Roll out in oiled pans. Put your toppings on now. Let rise while the oven heats, just 5 or 10 minutes.

Bake at 425F for 15-20 minutes. Makes 2 crusts.

Or, if you prefer, here’s a recipe for the Bosch

Pizza Crust

¼ C Honey

4 C very warm water

Stir for a few seconds (in the Bosch)

Add:

¼ C Yeast

Stir for a few seconds. Wait a few minutes until it bubbles and foams.

Add:

10 C Flour

½ C Oil or Italian Salad Dressing

2 tsp. Salt

Stir on #2 for 5 minutes. Turn out onto an oiled counter top and divide into 5 parts. Roll each out into oiled pizza pans or cookie trays. Let the Pirates poke it with a fork, alot, all over. Let them rise for about 5 – 10 minutes while the oven heats to 450°. Bake for 5 – 10 minutes, watch ‘em carefully. Take ‘em out when they’re barely done. Add some sauce, (we use spaghetti sauce) and your favorite toppings. Bake at 350°for 5 – 10 minutes until the cheese melts.

Here’s a trick if you like peppers and onions on your pizza. Chop the veggies the way you like ‘em and put them on a cookie tray, pop that in the oven for a few minutes while it pre-heats. You don’t want them to be browned, just kinda dried out a little. That way they don’t make your pizza soggy.

This trick I learned from my real-life friend KimC from Life in a Shoe. Leave one of your pizza crusts for a dessert pizza. Have one of the Pirates “paint” melted butter on it and sprinkle cinnamon-sugar over the top and bake it at 350° for 5 – 10 minutes. Keep an eye on it, you don’t want to be the mom who burned the dessert pizza! After it’s had a little time to cool, you can drizzle a little powdered sugar mixed w/milk over it, or just sift the powdered sugar over the top. There’s a ton of ways to dress this up, just have fun, and if you happen to have chocolate chips, that works for me, just press ‘em in.
