So many of y’all said y’all were gonna make the Spaghetti Mac Bake  from a few days ago, that I thought y’all might like to see what I did with it for this evenings supper.

The Squid asked if I could make a pizza for supper.  We had been discussing what would be easy to make for supper.  Of course pizza from scratch is not on the list of quick and easy suppers, but I got to thinking.  I do have mozzarrella cheese and pepperoni and sauce and pasta and sausage.  Why not make a Pizza Mac?  The recipe is ’bout the same as for the Spaghetti Mac Bake with a few adjustments.

1 can store brand spaghetti sauce

1 spaghetti sauce can full of water

1 small jar roasted red peppers, chopped (I got these on clearance, consider them optional)

1 can diced tomatoes

1 lb bulk sausage, cooked

3½ Cups elbow macaroni (or whatever small pasta you have in your pantry) UNCOOKED

½ – ¾ lb mozzarrella cheese, shredded

1 pkg pepperoni, sliced

Preheat your oven to 400°.  Pour spaghetti sauce into your 9 x 13.  Add water, peppers, tomatoes, sausage and uncooked pasta.  Stir it slowly so you don’t slosh it all over the place.  Don’t ask me why I said that?!  Now cover it with foil and carefully pop it in the oven for 40 minutes.  When you take it out you can stir it if you want.  Sometimes I do, sometimes not.  Now sprinkle/spread the cheese over it and add however much pepperoni ya want.  I put lots.  Pop it back in the oven for a few minutes so the cheese can melt.   Too easy, works for me!

    I made the Spaghetti Mac on Thursday for lunch when a friend and her three kids came over. We all ate (10 total) and there was enough left over for my 5 kiddo’s to eat for supper tonight. I served it with some bread, fruit and veggie so the portions weren’t giagantic, but my kids can really eat! Thanks for the great, EASY, tastey meal! I’m adding it to my regular rotation – it was a hit!

    It was perfect the first night…I think it was probably the microwave…Btw, the pizza mac is a great twist on this recipe. I bet my family won’t even realize it’s basically the same as last night’s meal when I try it next week!

    Oooh, sorry ’bout your leftovers. If it was a little dry the first night, I would say add more water to start. But the dry leftovers, I don’t know. Maybe they were in the m’wave too long. Maybe add a can of tomato sauce to begin with. Just give it a little added moisture without making it soggy.

    I made it last night and it turned out great. It was SO easy. I used penne, because that’s what I had. My family of picky eaters enjoyed it (took off the sausage for one of the kids). The leftovers (today’s lunch:) were a little dry…any suggestions?
