I have my own theories on food allergies and food sensitivities. But right now we are gonna talk about my dear friend Faith who has , along with her sweet baby Hope, been my house guest for several days. They just left for home yesterday. I’ll miss them lots!
Hope is quite allergic to several foods. And because Faith is still nursing the baby (and three cheers for that!) she has to be very careful about the foods that they both consume. Preparing meals for them and my family can be a real hat trick, but Faith is very resourceful and gracious, not to mention a fabulous cook.
So, on Tuesday we were sitting around my den visiting with Faith’s brother, who is an enormous computer nerd, and I say that in the most affectionate way. I stand in awe, Aaron! Anyway, the visiting and up-catching was so much fun that I neglected to start the supper that I had planned. I know! We were all aghast too!
What I was gonna make required way more time than I had left.
So, at 5 o’clock I walked into my kitchen without a plan. And food allergies to consider. And, did I mention, NO PLAN!
I’m not super organized, just ask my Very Dear Hubby. But I do operate very well in the ruts I have formed. For instance, I never loose my huge black van have to wonder where I parked at the HEB, because I always park in the very same row. Anyway, one of the ruts I rely on is HAVING A PLAN FOR SUPPER.
So, I called Faith in there to help me scour the pantry and the fridge and come up with a new plan for supper. And, just to be polite, and so that she and Hope could actually (read safely) eat it, we needed to somehow think up something to make that didn’t have any dairy, wheat, beef, beans, eggs, I’m not really sure where this list ends, but I start seeing extreme limits to my culinary skills after omitting the first 2 items.
Here’s what we came up with. I think we should call it:
Tex-Mex Chicken and Rice
- 2 C brown rice (raw)
- 4 C water
Cook the rice for about 30 minutes. Then add the following:
- 1 can diced tomatoes
- 1 can black olives, chopped
- 1 can hominy, not drained (feel free to substitute corn if hominy is too Texan for ya)
- 2 C cooked chicken, cubed (read about that here)
- 1 tablespoon Taco Seasoning (more or less, depending on how far north you live)
Stir it all in and pop the lid back on and turn the heat down fairly low. Continue to cook for about 30 minutes stirring occasionally. Oooh! This was very yummy. Serve it with some salsa picante or some Tabasco. A little sour cream on the side for my littles who still think tomatoes make food spicy.
- This made a huge pot of food.
- Didn’t cost a fortune to make.
- Came out of the blue.
- Was very delicious.
- And accommodated my allergic friends.
Gotta love a five-fold blessing!
