Actually it’s Chicken and Rice, but the fabulous aroma is KILLING me!

Sauté in butter:
- 1 chopped onion
- 1 bell pepper
- ½ pkg. sliced mushrooms (fresh)
Add:
- 2 cans chicken broth
- 2 bay leaves
- 1 teaspoon oregano
- ½ teaspoon sea salt
- pinch of black pepper
Bring to a boil and add:
- 1½ cups brown rice
- 2 cups chicken (already cooked and cubed)
If you’re using your frying pan, you need to transfer all of this to a 9 x 13 casserole dish and cover with foil.
If you’ve used your dutch oven, just put the lid on and pop it in the oven at 300° for an hour and a half of pure torture.
This is another of my Very Dear Hubby’s favorite dinners.
The Kitchen Prayer
Lord of all pots and pans, and things, since I’ve not time to be
A saint by doing lovely things or watching late with Thee.
Or dreaming in the dawn light, or storming Heaven’s gates,
Make me a saint by getting meals and washing up the plates.
Although I must have Martha’s hands, I have a Mary mind,
And when I black the boots and shoes, Thy sandals, Lord, I find.
I think of how they trod the earth, each time I scrub the floor;
Accept this meditation, Lord — I haven’t time for more.
Warm all the kitchen with Thy love and light it with Thy peace.
Forgive me all my worry, and make my grumbling cease.
Thou who didst love to give men food, in room or by the sea,
Accept this service that I do. I do it unto Thee.

Hi. Your recipe sounds delicious and I would love to try it. Only problem is that I live in Australia and so I need some weights. How much mushroom? Also, how big are your cans of chicken broth. I’m assuming that is the same as our chicken stock and ours comes in cartons.
