I’m not one to keep a pantry full of canned goods. But now we’ve got a hurricane coming, so I’m goin’ to the store tonight. I’m not counting on our power going out or the water getting contaminated, but, if these things should happen I don’t intend to have my family go thirsty or hungry, so I’m goin’ to the store tonight.
This is requiring a shift in thinking. I’m all in that “don’t spend any money” zone, and now I’m having to think about buying stuff like canned meat. Stuff I never buy, much less during a spending fast.

But, for supper tonight I’m in the “Nuthin’” groove. It’s a Mexican Cornbread Bake using up some food I found lurking in my freezer and my pantry. Amazing what you can do with not so much when you’ve got motivation.
I’m not gonna say it’s a recipe, but here’s what I did. I got out my trusty 9×13 casserole dish and sprayed it with oil. Spread out a pound of browned ground beef and a half pound of browned bulk sausage. Drained and added a can of kidney beans. (I know I should save the canned beans for my canned foods festival this weekend, but hey, it works in this dish so well, and they are cheap to replace, which I will.) Sprinkled about a ¼ cup of Taco Seasoning mix over it. Chopped some roasted red peppers. (Love that Dollar Tree!) Spread the peppers and some (about ½ pound) cheddar cheese over my meat and beans. Then mixed up some cornbread and poured it on top and used the rubber spatula to spread it out to cover everything up. It’s baking at 400° for 30 minutes. And it smells heavenly.

Your dinner sounds wonderful. I often find that those thrown-together meals are some of the best and many often end up making it into permanent rotation.
I don’t feel like making my usual Friday night pizza and was looking for something yummy but a bit quicker. This is just what I needed! Thanks.

Thanks Annette, it’s starting to look like we are west of Ike’s path, so I think we’ll be alright. This is a huge storm though, lots of folks will be affected. We should pray for ‘em.
I’ll be praying that you weather the storm safely and with minimal disruption. Gustav just blew threw here, and what I found was good to have on hand was apples, bread, peanut butter, crackers, gatorade mix to go with our filtered water, flour tortillas, refried beans and salsa. A head of iceberg lettuce keeps pretty well in an ice chest and satisfied our craving for something green and crunchy after a few days. Good luck and god bless.
