I learned this tip from Julia Child. No Kim, not personally. (She thinks I have a wild past that might include such crazy behavior like actually being Julia Child’s long lost niece.) I have been known to look at cooking shows on the “Babylonian black box of death” from time to time.
When you break open raw eggs make sure you run your finger around the inside of the shell. This pushes out the part of the egg white that clings to the inside of the shell. Every little bit counts and there’s no point in throwing out food, no matter how little.
When my family eats scrambled eggs we use at least 18 eggs. The amount of white that I scoop/push out of the shell with my finger when breaking 18 eggs would easily be equivalent to one whole egg. I sure wouldn’t throw out a whole egg.
