Boneless, skinless chicken thighs were on sale at my grocery store this week for 99¢ lb. and pork chops weren’t very much more @ $1.49 lb. So this week we are eating some meat. Probably a little more than in an ordinary week.
- Monday- Chicken Enchilada Casserole, rice, fresh fruit, apple tortilla pie. (read all the way to the end for the recipe)
- Tuesday- Chicken and Rice, fresh fruit, peas, pumpkin bread.
- Wednesday- Rice and Beans, fresh fruit, pumpkin bread.
- Thursday- Broiled Pork Chops, mashed potatoes, broccoli, fresh fruit, pumpkin bread.
- Friday- Chicken Fajita Tacos, nachos, fresh fruit, pumpkin bread.
- Saturday- Broiled Pork Chops, mashed potatoes, peas, pumpkin bread.
- Sunday- Chicken Fajita Tacos, rice, fresh fruit, pumpkin bread.
Wow, that’s rather repetitive, but it’s alright since the chicken and the chops are like a treat. These chicken dishes are some of our favorites. The pork chops are a real rarity. Some of my children have never eaten a pork chop, that they can remember anyway. And the pumpkin bread is a wonderful bonus. Our friends from Life in a Shoe were over for the day yesterday, and they brought us some pumpkins. Thanks Perry and Kim! ![]()
Apple Tortilla Pie
First off, let me just say, this is not a pie. This is light years easier than pie, and pie is pretty easy to begin with, so, there ya go..
You’ll need:
- 1 teaspoon Lemon Juice
- 8 – 10 Apples
- 1½ sticks Butter
- 8-10 Flour Tortilla
- 1½-2 cups Brown Sugar
- 1 teaspoon cinnamon
Preheat your oven to 375°. Spray your 9×13 with oil. Peel and dice your apples. Put them in a large bowl with the lemon juice. Stir as you add each apple so they are coated (a little) with the lemon juice to keep ‘em pretty. Melt the butter in the m’wave. Cut up the flour tortillas, just leave ‘em in a stack so you can cut them all at once, into about 1″ squares. Mix everything in with the apples, plop it into the 9×13, cover with foil and pop it in the oven for about 40 minutes. Just test the apples with a fork for done-ness. Do not eat this right out of the oven, it’s like lava! And really, you’re gonna want some vanilla ice cream or a dab of whipped cream, but it’s great without it, too.

Y’all know how it is. We had our friends from Life in a Shoe over and we were having such a grand time that I served all that Apple Tortilla Pie and the cake that they brought and I never even gave a thought to my camera. Sorry, maybe next time.
That looks brilliant! Have you ever buttered tortillas, sprinkled them with cinnamon and sugar and broiled until crisp?
I think that would be divine over the apple mixture.
