Menu Plan Monday- November 24th

This will be an unusual week.  I will only have my three smallest children at home with me during the day.  So, I need meals that either include them in the preparations or prepare meals that go together easily and quickly.

What on earth is Harjo Surprise?  Well, that’s a valid question considering I made up the name for this dish that my friend, Mrs. Harjo, made up.

Harjo Surprise

You’ll need:

  • 2 lbs. ground beef
  • 1 onion, diced
  • 1 can diced tomatoes, don’t drain
  • 1 can whole kernel corn, don’t drain
  • Rice

Brown the ground beef and onion together over medium heat.  Spoon off most of the fat.  Add the cans of tomatoes and corn.  Give it a stir.  Turn the heat down to low.  Cover and let simmer while you prepare the rice.

Serve the beef and veggies over the rice.

We enjoy adding sour cream or cheddar cheese on top, at the table.

    Sounds like a wonderful week of meals. Since hubby is gone on military travel for the next 3 weeks, I have to cook much smaller, hubby ually takes leftovers for lunch the next day.

  3. I might just have to give the Harjo Surprise a try. Looks simple and actually yummy. I like “mixed foods”.

    Sounds like you’ll be busy with the little ones in the kitchen all week- hope you have a nice Thanksgiving together. Ham is popular, and seems easier than Turkey anyway. :)

    Okay but what about the turkey and dressing and all the trimmings for THanksgiving on Thurday.
