Menu Planning Monday – November 17

I’m still working on getting more structure in our days.  We always get so much more done when we have a tighter schedule.  It sounds backwards, but it isn’t.  The better I plan, the more freedom I have.  I love having a plan for meals.

Since we’re having it twice this week, I’ll give ya my recipe for cornbread.  I’ll tell ya though, I did not create this recipe.  I’ve used it for so long I don’t remember where I found it, probably off of the sack of corn meal.

Cornbread

Preheat your oven to 425° and grease your 9×13.

In a large bowl combine:

  • 2 cups flour, I use unbleached
  • 4 Tablespoons sugar
  • 2 Tablespoons baking powder
  • 1 teaspoon salt
  • 2 cups cornmeal

Give it a stir and set that aside for now.  Get out your medium bowl and mix together:

  • 2 eggs, beaten slightly
  • ½ cup Oil, I prefer olive oil
  • 2 cups milk

Now stir the wet ingredients in your medium bowl real well.  Add the wet to the dry and stir just until all of the dry is moistened.  Pour it into the 9×13 and bake for 20-25 minutes.  If you have several small children to serve you can spread a little butter on it while it’s hot.  That way you don’t have to butter everyone’s piece of cornbread one at a time.  :D

Great menu. Good luck sticking to your schedule this week! The Braunes Abendessen looks a lot like the Mince & Tatties I have on my menu!

Actually, chili with mashed potatoes doesn’t sound half-bad. We eat leftover chili on baked potatoes all the time…. It’s filling, nutritious, and cheap, and makes a few cups of chili go a long way. I’ll have to remember this if we ever (ha!) have leftover mashed potatoes.

Sometime try putting some of the oil from your cornbread recipe in your baking pan and preheat it in the oven. Then pour the batter in the hot oil and you will have a crunchy bottom, but no more oil than otherwise. The prof thinks he’s died and gone to heaven…. But to quote Christian comedian Mark Lowery, “leave the sugar out of the cornbread and put it where it belongs…in the iced tea!” :)

I’m just kicking back today. Tuesdays and Wednesdays are our days off. I so look forward to them.
I’m enjoying watching “Murder She Wrote” online at Netflix.
