What a nice, festive button Laura has made for us to use on Menu Plan Monday.  Just puts me right in the holiday spirit, it does!

I got a new cookbook last week.  MOMYS stands for Mothers Of Many Young Siblings and if you have lots of children you need this book.  Come back tomorrow for Help for Growing Families and I’ll give a review of the best family cookbook I have ever seen.

I know I gave y’all a cornbread recipe already, but I have found a better one.  We love this cornbread the way Mr. Knox loves green eggs and ham.  We will eat this cornbread with the beans, and we will eat this cornbread for breakfast, one of the Pirates even talked about frosting it and having it on his birthday.

The World’s Best Cornbread

You’ll need:

  • 1 cup Sugar
  • 1½ tsp Salt
  • ½ C Butter, softened
  • 1½ tsp Vanilla
  • 3 Eggs
  • 3 C Flour
  • 1 T + 1½ tsp Baking Powder
  • 1 C + 2 T Cornmeal
  • 2 C Milk

Preheat oven to 400°, spray 9×13 w/oil.  In a large bowl beat together sugar, salt, butter & vanilla until creamy.  Stir in eggs, one at a time.

In a separate bowl mix flour, baking powder and cornmeal.  Stir flour mixture into egg mixture alternately w/milk.  Beat well.  Bake 30-35 minutes.  Best stuff in the world!

    Hey, that’s not cornbread. It’s corncake! It was 10 years before my southern husband would let me add a tbs. of sugar to the cornbread batter. I’m still afraid to tell my mother-in-law.

    Have you ever tried substituting orange juice for the milk in cornbread? It’s a yummy switch every once in a while!
