It got to be lunch time, so I asked the tallest Pirate in the house if he would mind making sandwiches for everyone. He said he’d be happy to do that and off he went. Only to come right back with some bad news. “We are out of bread and tortillas.”
Oh, bummer. I don’t really do lunch. I mean I don’t cook lunch. This is why I try to keep bread and tortillas in the house. Big bummer.
So I had a glance around the pantry and the fridge and came up with a wonderful, kid pleasin’, impromptu casserole.
They liked it so much they decided to name it. I don’t know how things roll at your house, but ’round here we don’t name stuff we don’t love. And since they loved it so much that The Squid and The Princess had thirds, I thought I’d better share it with you.
Jonah’s Secret Ingredient Casserole
Preheat the oven to 375°
- 10 oz. bag elbow macaroni
- 1 can cr. of chicken soup
- ½ cup milk (only if your kids like it with more “gravy”)
- 1 cup frozen peas
- 1 cup diced ham (you could use a can of tuna and the “Jonah” bit would work even better, but we had ham)
- 1 cup cheddar cheese, shredded
- ½ cup whale crackers (we used Stouffer’s)
Cook the noodles and drain ‘em. Stir everything, except the crackers, together and pour it into an 8×8 baking dish, cover with foil and bake for 20 minutes @ 375°.
Top with the whale crackers and pop it back in the oven for 3-4 minutes.
This is the first time that The Princess has ever asked for seconds on a casserole, and she even followed that up with thirds! It’s a momentous occasion.

3- 5 lb bag tater tots…brick of cream cheese (super soft)…diced left over ham…can of cream of mushroom…shredded cheddar….grease pan…mix everything, bake 350 for 30min…..disgustingly delicious……

I am going to make this for dinner, I dont have peas so I will use corn, I dont have Whales so I will use cheese its…I am already drooling thinking about it…
Of course it was a good casserole, you had all the basics for a good casserole: meat, veggiers, starch, glue, and cheese. I’m guessing the whale crackers worked on children’s sub conscience to promote more eating. And that’s not a bad thing.
A friend once told me that her day care served tacos one day. This was about 5 ago when green ketchup first came out. The day they served green ketchup with the tacos, the children ate 2-3 times as many as usual. Amazing what things influence us.
I think it’s awesome that your children were involved in naming a casserole. They are learning to appreciate food preparation, not just demand to be fed.
