It means Frugal Friday - Inexpensive Lunch.
We usually make our quesadillas with chicken and cheese or just cheese. I’m a little shy on both of those ingredients this week, but I have beans. I have leftover beans from the last time we had rice and beans for dinner. So, our quesadillas had beans and a bit of chicken and a tiny, little bit of cheese.
If you’ve ever made quesadillas before, you know that the cheese is the glue that holds the whole thing together. Well, we like to live on the wild side, so our quesadillas were sorta experimental. (Heavy emphasis on the mental.) So, instead of mashing our beans and thereby creating a “new” quesadilla glue, we just made a mess. A delicious mess. Oh, they were so yummy-licious. Just rather difficult to contain.
So, instead of calling them quesadillas, we decided Sloppy José would be a better name.
You can do this in a dry skillet or with a bit of oil.
And really? You might consider mashing the beans ahead of time.
One completely unexpected side benefit to calling this lunch Sloppy José is that it made “The Frowner” (aka Calico Zak) grin hard! And that’s a real trick!

We must be on the same wave-length this week. Tonight I’m using my leftover beans to fill out some “enchiladas” – no sour cream, and I’m probably not making any sauce, but it’ll be rolled up and baked.
Homemade stuff is just fun.
