Two recipes this week. The first is a timely concoction I made today for lunch. I had a couple of pukey Pirates yesterday, so we needed some simple fare today.
Mix that complication with a few too many viewings of Kung Fu Panda and voilà…
Secret Ingredient Noodles
- 3 boxes vermicelli
- ¼ cup chopped, cooked chicken (diced small)
- ½ cup frozen peas
- 1 can chicken broth
Boil the noodles according to package directions. Throw in the frozen peas for the last 3 or 4 minutes. Drain and return the noodles to the pot. Add the broth and the chicken and whatever seasonings you dare. Dealing with tender tummies here, so I just added some garlic powder and s& p. Give it a good stir and serve. Play up the secret ingredient bit and let them watch Kung Fu Panda while they eat.
(Gasp!) TV? While eating? Yes. It’s one of the perks of being sick aboard this ship.
This next homemade goodie is one we have enjoyed for years and years. And Lydia C. asked for the recipe yesterday, so I thought I would kill two birds with one stone cookie.
Oatmeal Bars
Grease or butter your 9×13 and turn your oven on to 350°.
- 6 cups Oats
- 1 ¼ cups sugar (white or brown)
- 1 cup flour (all purpose or whole wheat)
- 1 teaspoon sea salt
- 1 cup butter, very soft, even a little melty is good
- 1 teaspoon vanilla
In your large bowl mix all the dry ingredients. Add the butter and vanilla and do your best to get it mixed well. I like to use a wooden spoon for this part. It’s kind of a pain, but it’s worth it.
Dump it into the 9×13 and use your hands or the back of a large spoon to press it into the pan, nice and firm.
Bake for 25-30 minutes. Cool slightly before cutting it into bars. Now leave it alone until it is all the way cool.
The first time I made this I didn’t see the part about let it cool all the way before removing the bars from the pan. I thought I had ruined it. So, The Cap’n and I sat there in the kitchen enjoying our warm oatmeal “bars” with a spoon. He was about 4 years old at the time. Nice, yummy memory.

By all means, use the old fashioned oats. I always use old fashioned, and meant to say so in the post. Someone must’ve interrupted me while I was typing. Go figure. I also posted our granola bars recipe we like, on Menu Plan Monday. Here’s the link to that. Seems like your oats ought to keep for a long time if they are in an airtight container. However, I might suggest baking up a storm and freezing the oatmeal bars and granola bars.
I would love to try your oatmeal bars and have a question. You say to use oats. Can this be Old Fashioned oats? I bought a bulk of it a while ago and want to use them up before they go bad. If you have any other recipes with oats, please share them so I may try out some new recipes!
