Menu Plan – January 5

Yikes!  I’m so preoccupied with the whole coupon shopping thing that I almost forgot to post my menu.

I may start posting the menu on Thursday or Friday and just linkin g on Monday.  Is that allowed?  I hope so, because I nearly lost my notebook with the menu plan.  Then I’d really be lost!

Chicken Tacos

  • 3-4 lbs boneless, skinless chicken parts (I prefer thighs, but this will work with breasts)
  • 2 cans diced tomatoes w/chiles
  • ¼ cup olive oil

Dump chicken in crock pot.  Add the other ingredients.  Turn crockpot on high for 1 hour and then down to low for 3-5 hours, depending on how hot your crock pot cooks.  You want the chicken to be falling apart when you try to pick it up with a fork.  This may take a while so start early in the day.

Once the chicken is falling apart, get two forks and pull all of the chicken meat apart right there in the crockpot.  (aka shredding)

This is so fantastic served in a flour tortilla with some sour cream and cheddar cheese and a dab of salsa.  YUMMY!

Thanks for the pasta casserole recipe. I’ve never tried making something like that with uncooked pasta. I’ll have to give it a try!

It’s so easy, I love cooking with the uncooked pasta. I seldom cook pasta in a pot on top of the stove.
