Baked Oatmeal

Preheat your oven to 350°.   Spray your 9×13 with oil.   In your large bowl mix together:

  • 3 cups Oats – I use old fashioned (store brand)
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Set that aside for now and get out your small bowl.  Mix together:

  • 2 eggs
  • 1 cup milk
  • ½ cup oil (this is really tasty with coconut oil)

Mix the wet ingredients into the dry ingredients.  Pour it into the greased 9×13 and bake for 25-30 minutes.  Super easy breakfast.

    Oh, yes. Ok, you’re so right. I bet that’s what she meant. (smacking my forehead) I let the Pirates bake this, so we get inconsistent results. Sometimes we eat it with our hands, and sometimes we use a bowl and spoon, but we don’t butter it or put milk on it or anything.

    :-) LOL I think BarbaraLee might have meant, do you heat it up then or eat it cold/room temperature? I agree though, my kids eat it and do a thorough job licking their fingers at the end. Me too, but I try to be a little more subtle. :-)

    I agree with the bake time problem. We make ours the night before.

    We loved baked oatmeal in our house, too. I usually use butter instead of the oil, and even substitute ground flax seed for some of it on occasion.

    The only reason we don’t have it more often is the bake time. I can’t get it in the oven on time for breakfast most day, so we do enjoy it as a snack now and then, or for a weekend breakfast.
