Cheesey-Garlicky Biscuits

We may never set foot in another Red Lobster this side of Paradise.  (They do have Red Lobster in Heaven, don’t they?)

Anyway, Boone has a shellfish allergy.  And then there’s that other reason. ($$$)

But, I’m ok with it.  ’Cuz I know how to make those Cheesey-Garlicky Biscuits that are the best eats on the planet! I don’t know what Red Lobster calls ‘em, but we call ‘em…

Cheesey-Garlicky Biscuits

Preheat your oven to 450°. All you need is:

  • 6 cups unbleached white flour
  • 2 teaspoons salt
  • 2½ Tablespoons baking powder
  • 1 cup butter  (and another ½ cup, melted, for later)
  • 2 cups cheddar cheese, grated
  • ½ teaspoon garlic powder (and another ¼ tsp for later)
  • ½ teaspoon parsley flakes (optional, but I like green flecks in all my food)
  • 2¾ cup milk

Get out your big bowl and measure the flour, salt, and baking powder into it and mix it up.  Then add 1 cup butter and use two dinner knives to cut the butter into the flour.  If you don’t know how to do this, click here to go watch a YouTube vid about it. (He does everything else wrong, but he cuts the fat into the flour with knives, so you can see how that part is done.)

Next, add the cheese, garlic and parsley and give it a stir. Now add the milk and stir it in. If you find the dough starting to get stiff and you still have some flour in the bottom of the bowl, you need to add some more milk.

Once that’s all mixed you just use a fork to drop racquet-ball size lump of dough onto an un-greased cookie tray.  Brush melted butter over the tops and pop ‘em in the oven for about 8-10 minutes.

Brush on some more butter when they are done baking.  Cloth napkin-lined plastic basket optional.

This recipe is tripled.  If I am gonna make biscuits, I am gonna make a bunch.  It’s enough to go with our soup for lunch and our ham for dinner.

This is turning into a week of restaurant food at home.

And can I just say, my boy can take a nice photo, eh?

    Well, Ann, I think it would fit your “theme” if you leave out the savory ingredients and just throw in a couple of handfuls of chocolate chips and some chopped walnuts. OK, now I’m hungry. :(

    Way to go! I love recipes that help keep us out of the restuarants…I love eating out, but it’s so expensive, and really, when what you crave is biscuits, it seems kinda silly to go that route :)

    How Funny! we were just at Red Lobster the other night celebrating a friends birthday. It wasn’t our choice (we like the place), but it’s spendy and the food seems to be on the salty side.     I will try these this weekend. Fresh Red Lobster biscuits are yummy. Around these parts, though, KFC doesn’t even make biscuits. (You get soggy fries with everything.)
