I wonder if I would have noticed I was in a rut if I weren’t posting my weekly menus.  This week is not a complete departure from the typical, but it’s a start.

Sometimes I get a craving for some Taco Bell Nachos Supreme or Nachos Bell Grande.  But take out food really needs to be a thing of the past.  

  1. It’s not frugal.
  2. It’s chocked full of things that I don’t wanna know about consume or feed to my family.  

If we make our fancy nachos at home I can defeat both of those problems and feed my craving at the same time.  Can’t beat that with a stick!

Los Mejores Nachos

(that’s my gringo Spanish for The Best Nachos)

Put all that in the skillet together and mix and heat thoroughly.  Meanwhile put all your add ons in bowls and set ‘em on the dinner table or counter and serve buffet style.

You’ll need corn chips galore and several of the following add ons.

  • sour cream
  • grated cheese
  • green onions, sliced (this is the “make or break” ingredient for me)
  • tomatoes, diced
  • lettuce, sliced thin or chopped
  • guacamole
  • salsa
  • jalepeños, sliced
  • olives, green or black, chopped or sliced
  • your favorites

Isn’t that easy?  And.. muy delicioso!

    We do nachos on a frequent basis but use chicken instead of beef.

    Fast food is also going bye, bye at our house. Those joints just have a big suction hose stuck in our bank account. No more! I’m going to have to learn to recreate the cheesy bean and rice burrito.

    I get that same Taco Bell craving. (along w/ chili cheese burritos).
