Menu Plan Monday- Groundhog Week

Lots of the broccoli in my garden will be ready to eat this week, so I’ll be adding it to the Alfredo on Tuesday, an probably serving it as a side dish once or twice during the week.

I’m really looking forward to having a more diverse garden in the Spring.  I think I have a small case of the Winter-Blahs.  Pictures of carrots and onions aren’t supposed to be exciting, are they?  Well, maybe punxsutawney phil won’t see his shadow this morning.

Scalloped Potatoes

Preheat the oven to 400° and butter a 3 qt casserole dish.

You’ll need:

  • 8 (or so) potatoes -  I peel mine, you can do what you like.
  • ½ cup flour
  • ¾ cup milk
  • 1 stick butter
  • 4 – 6  green onions, sliced
  • salt & pepper

This is a dish that I like to have 3 or 4 children help me with.  Very fun family activity.

Slice all of the potatoes.  Put the flour in a small bowl with a spoon.  Put the sliced onions in a small bowl with a spoon.  Slice the butter into small pieces.  Get out the salt and pepper shakers.  Measure the milk and set it aside.

Place one layer of potatoes in the dish.  Have the butter child put about 4 pieces of butter on top of the potatoes.  Now ask the flour child (snort!) to sprinkle a spoonful of flour over that.  Then ask the s & p child to sprinkle both on.  Next ask the onion child to spoon some onions on.  Then start all over again.  Do this until you run out of potatoes or the dish is full.  Now is the time for the milk.  Pour on enough to make about an inch or so in the dish, let the children drink the rest.  Cover with foil and bake for about an hour, take the foil off for the last 10 minutes or so.  Test with a fork for tenderness.  This dish stays warm for a long time, so start it a little early.

    Since you have littles and a baby you are forgiven for eating from a box. (LOL) I would be right there with ya. We have more important things to do when the babies are little.

    MMMM…. yummmmmm…. potatoes. I love me potatoes! (I love me bread and pasta too.) No low carb diets for me. I must confess though, I usually make my scalloped potatoes from a box.

    Going along with the groundhog theme, I wracked my brain trying to come up with a dish that used ground pork (get it?– ground “hog”!) to make for Monday night. I gave up and decided to have tacos instead.
