We really keep it simple for the birthdays. No over the top parties, just family. No extravagant gifts. Just one. And some socks and undies.
But I do let them choose the menu for dinner and dessert. But the dinner has to be dinner, not ice cream sandwiches or pie. They ask, every year. I say no, every year. I guess it’s fun to think of eating a dessert dinner.
We are still trying to keep the rest of the week’s meals very simple, nutritious and frugal.
- Monday – Rice and Beans, maybe some cornbread, carrots
- Tuesday – Spaghetti Mac Bake, maybe a french bread, fruit
- Wednesday – Pasta Alfredo, salad, more french bread, fruit
- Princess’ Birthday (you may know this day better as Thursday) – Chicken nuggets, tater tots, corn, cake, ice cream
- Friday – Crispy Tacos (I am trying to switch this out for the pizza-night we’ve been having. Tacos are easier and everyone seems to like ‘em.)
- Saturday – Shepherd’s Pie
- Sunday – Taco Salad
Apple Nut Cake
aka THE BEST CAKE IN THE WORLD!!!
This cake takes much more effort than a box mix, but, since it is the best cake in the world we don’t mind. It’s not tricky, just a bit of work.
Also, you should bake it the day before you want to serve it. It is just so much better the next day.
Preheat your oven to 350°. Butter a bundt pan and sprinkle it with sugar and set it aside.
In your large bowl mix:
- 2 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons baking soda
Set that aside and get your medium bowl and mix:
- 4 eggs
- 3 cups peeled, grated apple
- ½ cup raisins
- 1 cup chopped nuts (I use walnuts)
- 1 teaspoon vanilla
- ¾ cup vegetable oil
Now stir the wet ingredients into the dry ingredients. Don’t overblend. Pour it into the bundt pan and bake for about 50 minutes. Do the toothpick test. It’s ok for little bits of cake to adhere to the toothpick, as long as what sticks is not raw, gloppy batter.
Let the cake cool for about 10-15 minutes then turn it out onto a serving plate. You could put a drizzle icing on this, but I never do. It is simply the best cake in the world, even without icing.
