Chile Relleño Casserole

This is super easy to make!

You’ll need:

  • 2 – 7 oz cans of green chiles, chopped and drained
  • ¾ lb m. jack cheese
  • 10 eggs
  • 1¼ cups milk
  • ¼ cup whole wheat flour
  • 2 tsp parsley flakes or chopped fresh
  • 2 Tbsp baking powder
  • 1 tsp salt

Preheat your oven to 350° and spray oil in your 9×13.

Spread the drained chiles in the pan.  Combine the rest of the ingredients in a bowl, and pour it all over the chiles.

Bake for about 50 minutes or until the center is set and the top is browned somewhat.  Let cool for 10 minutes and cut into squares.  Serve it next to somehomemade tortillas and refritos (refried beans).
