I'm sure the skillet version is much better. Once I tried a recipe where you fill dough "tortillas" with cheese, fold, seal, and fry. Tasty, but a lot of the cheese leaked out and made a horrible mess. (Even the oven-baked version I made up leaked badly.) As my 10 yr old usually makes lunch, “we” do quesadillas in the microwave.
