Peanut Butter Bars

Congratulations! You have been to to Ship Full O' Pirates over 100 times! Just thought you'd like to know.

Alright, I really messed up.  I ate sugar and made myself sick.  Physically ill.  I feel like a kid who has tried chewing tobacco for the first time.  My tummy is bad and my head is squishy and all my joints hurt.

I am a ridiculously slow learner.  I just have to stay away from the sugar.  I may not be able to rout every molecule of processed sugar out of my diet but it’s not hard to keep the big helpings of it out of my mouth.  You know, like the amount found in, just for instance, 3 chocolate chip cookies.  Just sayin’.

But I can’t stop being a “sweet” mom.  I gotta give the treats and as we have found, if there are sweet treats I am gonna eat some of it.  So, it needs to not have sugar.

This is a recipe that we have had success with, and you’d never guess that it has no sugar and only 1/3 cup of peanut butter.

Peanut Butter Bars

  • 1 cup rolled oats
  • 1 cup very hot water
  • ½ cup butter, softened
  • ½ cup honey
  • 1 egg
  • 1 cup whole wheat flour
  • ½ tsp baking soda
  • 1/3 cup peanut butter
  • 1 tsp vanilla

Preheat yer oven to 350°.  Soak oats in hot water in bowl.  Cream butter, honey and egg in bowl.  Add oats and the next 4 ingredients.  Mix well.  Spread into a greased 9×13.  Bake @ 350° for 10 – 15 minutes.  Let cool, cut into bars.

Very Yummy!!!

  1. Oh these look fantastic! I also try to avoid a lot of sugar, but its sooo hard because its soo yummy. I can’t eat any of those “fake” sugar products either, they just taste too awful for me – I have the aftertaste for hours. Thank you so much for sharing this, it is great to find sugarless treats!

    Hi Julie,
No, I’m not interested in using splenda or equal. I do have some stevia and I think I tried zylitol. I find the taste to be odd. Don’t know if I’ll use them or not. I can eat honey, but don’t like to over do that either, mostly because of the expense.

    Hi Cyndi,
Isn’t that weird? I’m just really aghast at just how horrible it makes me feel now. What do ya think? Was I reacting to sugar this way all along, only I was desensitized or something? I know my joints used to hurt way more than they do now (when I stay away from the sugar, that is.) I also noticed that I don’t ever feel full when I have had sugar. Never get that satisfied “I should stop eating now” feeling. Just a continual sense of “I should have a little something.” That is really not gonna help the situation. Well, at least I know what is causing it. Now I just have to start collecting recipes that have no sugar.

I’m so sorry you aren’t feeling well from the sugar. If it makes you feel better, all the contestants on Survivor do the same thing with food. They have very small rations and are hungry most of the time so when they win food as a reward they all shovel it in and then get really, really sick. Can you substitute honey in your cookies or Stevia? Will it make a difference in how your body reacts?

Can you, or do you even want to, use Splenda?
Maybe it could be an option for you to still be a “sweet” mom and enjoy occasionally yourself? (It does cost more than sugar ~ bummer)
