This is the easiest breakfast casserole ever, and it’s so delicious. I would make it every day, but that might take the special out of it after a while. Hubs likes this so much that he has asked me to make this our regular breakfast on Saturdays and Sundays. (glad it’s easy to make)
You’ll need:
- ½ bag of frozen hashbrowns – the ones I like best are called O’Brien – they have peppers and onions in with ‘em.
- 1 lb bulk sausage, browned – I brown 2 lbs every Friday afternoon so I am ready for the weekend.
- 1 lb cheddar cheese, grated (you can get by with less, but we like it cheesey)(and of course, I buy it already grated to save even more time)
- 10-12 eggs – I use the stick blender to stir ‘em up REALLY well.
Heat the oven to 400°. Spray the 9×13 with oil.
- Put the frozen potatoes in the 9×13 and spread ‘em neatly.
- Next add the cooked sausage, spread it out.
- Sprinkle the cheese over the meat.
- Stir the eggs thoroughly and pour ‘em over the cheese.
- Pop it in the oven and bake for about 30 – 40 minutes.
It’s that easy!

And, you’re right, serving the same yummy thing day after day does make it lose its sparkle…
