Breakfast Tacos Today! Come on Over!

Ordinarily I don’t do much about breakfast.  The kids either eat a (homemade) granola bar or they make peanut-butter roll-ups (which is just peanut-butter smeared onto a flour tortilla and *ahem* rolled up).  I either have some toast with my tea or fry a couple of eggs.  That’s the normal routine.

But today is not turning out to be either normal or routine.

For starters, I am sick.  (And I complain way too much about it.)  Actually I think it’s just a raging case of allergies.  But the thing to remember is, I feel icky.

Secondly, Hubs took all the teenage Cowboys to work with him. . .

…FOR THE WHOLE DAY!

So weird, I’m used to most of ‘em being around.  They’re good company, they help with heavy lifting and jar opening, and they eat every scrap of food around the place.

It’s just odd not having them here.

So, this morning I got a hankerin’ for some breakfast tacos.  I fried up a whole pan of hash-browns and added a few eggs into the pan and tried, really tried to not cook too much food.  I just really don’t have a clue how to cook reasonable amounts of food any more.

We might be having breakfast tacos for lunch today, too.  Or maybe Trixie will have to help us out.

The up-shot is . . .

I don’t even have to think about algebra until Monday!!!

And just in case you don’t know how to cook breakfast tacos the simple, easy, fast way,  here ya go.

This is only gonna feed one teenager, or 5 non-teens.

You’ll need:

  • 1/4 bag of frozen hash browns, I really like the kind with peppers and onions already in with ‘em!  Saves a step!
  • 1/3 cup olive oil
  • 6 – 8 eggs
  • several flour tortillas – just the cheap ones will do

Go ahead and use the big, non-stick skillet.  Pour the oil in and turn the heat to med/high.  After the oil has heated a bit add the potatoes, still frozen, straight out of the bag. (See?  Easy!)

Set the timer for 4 minutes.

Once the timer goes off turn the potatoes and set the timer again, 4 minutes.

After the 4 minutes turn the potatoes again.  If they’re lookin’ done by now go ahead with the eggs, but you might like your potatoes crispy like I do, so set the timer for 3 more minutes. NOW the potatoes are done enough!

Turn the heat down to medium.

Crack the eggs right into the pan, right on top of the potatoes and let ‘em cook a bit, maybe a minute.  Then go ahead and start turning the eggs.  Not too gently, you want those yolks to bust.  Stir ‘em around a bit as they cook.  Once the whites are solid you’re done.

Slide the whole pan full into a bowl.  Put about a 1/2 cup of deliciousness into each tortilla.

Super simple, super delicious!
