Free Chicken Stock

Right this minute it’s 70° out and I actually feel warm from all the work I’ve been doin’.    Even so, it’s a bit cool in the night, so I have decided it’s time for soups and stews.

Lentil Stew is on the stove bubblin’ away.  Chicken Stock is in the big crockpot crankin’ up for an overnighter.

I didn’t really plan on doin’ the stock today, but while I was in the kitchen makin’ the lentils I happened on lots of stock components just lurking about in my fridge and freezer.

I’ve been diligently saving up stuff like chicken bones and veggie ends in ziplock bags in the freezer, and it just so happens that Hubs has a sore throat.  All that added together caused stock to be started in my crockpot.  It’s kind of a kitchen sink affair.  Mostly it’s whatever looked good while I was searching.

Soups and stews are so easy, and so ever-lovin’ good for us.  It’s pretty cheap eats and goes so well with a nice loaf of homemade bread.

The highlight of my day happened while I was going out back to see if the laundry was dry yet.  I happened to glance at the (long neglected) herb garden that is next to my back door.  The one I gave up on a couple of months ago when the garden hose couldn’t combat the 105° afternoons for 3 months on end.  Well now, since it’s been raining so often, like every other day, some of my old dead herbs have resurrected themselves.

I’m so happy!  I love to cook with herbs.  I love to cook soups and stews with herbs.  But the best thing is cooking soups and stews with fresh, home-grown, organic herbs!

I am so happy to see this recipe for chicken stock. It is so easy, and so wonderfully good.
I use my chicken carcass from rotisserie chicken. Thank you for this helpful and practical post!

So few people make their own chicken stock these days. Good for you!!

Yummm! Fresh, homegrown herbs are the best. That is one nice thing about Texas over Michigan…. longer growing season. My herbs were done last month.

Hi Anonymous (Cyndi), We actually have two, shorter growing seasons, unless we have a mild Summer (ha!). And my herbs were done last month too. But the rain. Ugh! I think it would be way better if there was a mist that would rise from the ground in the mornings, wait, that was Paradise, huh? I guess I have to take the cursed weather the way it comes. ;)

Yay for you! I loved growing my own herbs. We’ve only lived in this house for a year, so when spring came around hubby gave me choice between putting in a garden and getting dental insurance – well duh – with 5 kids and at least 2 needing braces it was a no brainer. But I’ve been dutifully saving my pennies, and plotting and planning for next spring. I don’t think he knows what he gotten into by giving me a whole year to think about it!
BTW – your bread looks delicious!

Gee, I never even thought of making stock in the slow cooker. Great idea. I grow my own herbs too and love cooking with them. I just brought some of mine indoors so I can have a little herb garden this winter.

Well, you’re in good company, Shirley. I never thought of it either. Had to be told. Story of my life. I do cool stuff but it never occurs to me, I have to be told, and usually shown. ;)

I love a good homemade stock (my brother is a chicken farmer!), but I had to take a break when I was diagnosed with fluoroderma, or acne caused by fluoride ingestion. Chicken skin and bones have high amounts of fluoride that dissolve into the stock. Who would have guessed that my delicious homemade chicken stock was causing my face to break out! If the chickens are fed organic feed it shouldn’t be a problem, though. Thanks for sharing your lovely pictures.

Not only is homemade chicken stock good for you, it tastes wonderful. We make it around here and before I have a chance to make a wonderful soup it is gone. We use it for everything, when we cook rice, when we steam veggies like kale and carrots, and our personal favorite, when we make gravy and have chicken and potatoes and gravy. Just Delish! Thanks
