Since Kim’s brother-in-law asked for the recipe . . .

Granola Bars

Preheat your oven to 350 and spray your 9 x 13 with oil.

Group A:

  • 4 cups oats
  • 2 cups flour
  • 1 cup sugar
  • ½ cup coconut
  • ½ cup chocolate chips
  • 1 cup nuts (we use peanuts)
  • 1 cup wheat germ (don’t leave this out, it really impacts the texture, and it’s good for you)(it’s on the cereal aisle)
  • 1 tsp salt
  • 1 tsp cinnamon

Group B:

  • 1 cup oil (we use coconut oil)
  • 1 cup honey
  • 2 eggs
  • 4 tsp vanilla

Combine Group A in your large bowl, stir.  Combine Group B in a medium bowl and stir.  Add Group B to Group A and mix together well.  Spread and press this mixture into your greased 9 x 13.  Bake @ 350° for 25-25 minutes.  Cool in the pan and cut into bars.

    These are of the softer, somewhat chewy, rather dense variety. :D

  4. My family loves granola bars. Hubby likes them chewy and son likes them crunchy. I’m wondering if these are more crunchy ore more chewy?
