A Depression Era Recipe
You’ll need:
- 1 potato
- 1 tablespoon of butter
- a dash of vanilla
- powdered sugar
- peanut butter
Nuke a large potato, or you could cut it up and boil it. Let it cool, scoop out the insides into a medium bowl. Add the butter, mash it up with a fork. Stir in a dash of vanilla (use the real deal).
Add as much powdered sugar as it will absorb, stir it in as you go and keep stirring and adding until it has the texture of a dough you can roll out. Roll it out and smear it with peanut butter.
Now roll it up into a log and hide it in the fridge for a couple of hours. Slice it into pinwheels and pour yourself the kids a glass of milk.
Very yummy, very sweet! What a nice treat for this mama the kids!
Now that’s some very frugal candy! Let’s all turn a blind eye to the powdered sugar and focus on the nutrition in the peanut butter and the potato, shall we?
