Veggie Wraps

This makes a nice, light, vegetarian lunch for five.

You’ll need:

  • 10 flour tortillas
  • 1 block of cream cheese
  • 1 cucumber sliced thin
  • 1 carrot, grated
  • 1 tomato, sliced
  • Jane’s Crazy Mixed-Up Salt (or whatever seasoning salt your family enjoys)
  • The raisins in the photo are for serving with the wrap, not in it.

We used our food proccessor to grate the carrot and slice the cucmber.

Sally Mae got to operate the buttons while I pushed the veggies in.

I sliced the tomato with a knife on the cutting board.

Spread about 2 or 3 tablespoons of cream cheese on a tortilla.

Put 3 or 4 slices of cucumber in a line down the middle.

Sprinkle some grated carrot over the cucumber slices.

Add three half slices of tomato.  We don’t all like fresh tomato, so we considered it optional.

Sprinkle with the seasoning salt.

Wrap both sides of the tortilla over the middle and slice the whole thing in half.

    I hear ya, Becky. Thy food shall not toucheth thine other foods. But, that’s part of my sneaky plan with the whole “teaching the child to cook” thing. It’s easier for them to choke the weird stuff down if they went to the effort to make the stuff! ;)

    Great job Sally Mae!!

    I wonder if I could get my kids to eat this. They like tortillas, and they love veggies and cream cheese, but most of them balk at mixing things together. We even have divided plates that some of them still prefer to use.

    That sounds delicious, Anita! I should go make lunch before I get too hungry. I’m kinda wishing I had some chicken strips waiting in my freezer. Maybe I’ll do that next week. Thanks for the idea! :D

  4. We’ve been enjoying wraps for the last year. I really like to cook up lots of chicken strips in a variety of flavors and freeze them. Easy to pull out to make wraps for a quick lunch or dinner. I just add lots of fresh veggies to go with them and now, a homemade ranch dressing. Yummy! My youngest daughter didn’t do any cooking this week that I photographed. I think I will add Sue Gregg’s Lunches and Snacks book to her list and see what she comes up with. Thanks!
