<li>2 t. butter, softened</li>
<li>7-oz. can whole green chiles, drained and cut in strips</li>
<li>8-oz. pkg. shredded Cheddar cheese</li>
<li>8-oz. pkg. shredded Monterey Jack cheese</li>
<li>14-1/2 oz. can stewed tomatoes</li>
<li>4 eggs, beaten</li>
<li>2 T. all-purpose flour</li>
<li>3/4 c. evaporated milk</li>
</ul>
<p>Spread butter in a slow cooker. Layer chiles and cheeses; add tomatoes. Stir together eggs, flour and milk; pour into slow cooker.  Cover and cook on high setting for 2 to 3 hours. Serves 6.</p>
<p>Chili Rellenos are my FAVORITE!  I&#8217;m almost sad that the crockpot is already cooking tonight&#8217;s supper.  Ah well, tomorrow is another day.  I&#8217;m certainly gonna double this and use my 7qt Crockpot, but I guess I could also use a single recipe in the 4 qt Crockpot for lunches.  Look-out, world!  Chili Rellenos is my new &#8220;go-to&#8221; recipe!  I&#8217;ll probably even add extra eggs to this since I have so many laying hens right now.</p>

			<content:encoded><![CDATA[<p><img class="alignright size-full wp-image-8447" title="popeye" src="http://shipfullofpirates.com/wp-content/uploads/popeye.jpg" alt="" width="294" height="300" />Way back before we had any kids, John and I used to walk to work at his pet shop and walk home every day (because we had no car).  It was about a mile or so, and we were young and very fit.  Actually, that&#8217;s an understatement.  We were really fit and rather skinny.</p>
<p>On the way home from work we passed by Popeye&#8217;s Fried Chicken.  Now, I have said before, tongue firmly planted in cheek, that if Fried Chicken were a religion, I&#8217;d be sorely tempted to convert, but I don&#8217;t half mean it.  Really.  Kinda.  Whatever.</p>
<h3>Y&#8217;all, I love me some fried chicken!</h3>
<p>Anyway, we were about as poor as we were skinny, so the fried chicken wasn&#8217;t on the menu.  But every once in a while we would indulge in a few sides.</p>
<p>John&#8217;s favorite was the Red Beans and Rice.  My favorite was the Dirty Rice.  I don&#8217;t remember if they really called it dirty rice, but oh.my.goodness.  That was some go-O-o-O-o-O-od stuff!</p>
<p>I decided to take <a href="http://frugalhacks.com/2011/05/09/frugal-links-9-2011/">my own advice </a>and learn to really make some Dirty Rice.  I applied <a href="http://inashoe.com/">KimC&#8217;s</a> homeschool method of perusing many recipes online and then compiling a whole new recipe, pickin&#8217; and choosin&#8217; all my favorite parts.</p>
<p>Here&#8217;s what I came up with.<img class="alignright size-medium wp-image-8459" title="dirty rice 001" src="http://shipfullofpirates.com/wp-content/uploads/dirty-rice-001-300x225.jpg" alt="" width="300" height="225" /></p>
<h3>Dirty Rice</h3>
<div id="_mcePaste">Ingredients:</div>

<li>1 pound Farmland Hot and Zesty Breakfast Sausage / bulk</li>
<li>1 Tablespoon Bill&#8217;s Best Chick&#8217;nish Seasoning</li>
<li>4 cups water</li>
<li>1 teaspoon Louisiana Cajun Seasoning</li>
<li>2 cups Long Grain Rice</li>
<li>6-8 green onions, sliced</li>
</ul>
</div>
<div id="_mcePaste">Directions:</div>
<div id="_mcePaste">Brown the sausage in skillet until pink color disappears, crumbling with fork.  Drain off most of the fat. Stir in everything else.  Bring to a boil.  Simmer gently, covered 18 to 20 min. or until rice is tender &amp; the water is absorbed.</div>
<div>This is one of those recipes that you can make just however you like.  Adjust it to your taste.  I adjusted it to what was available in my  part of the world and my pantry.</div>
<div>I&#8217;ve made plain rice (which I adore) 2 or 3 times a week for ever and ever amen.  When I make &#8220;fancy&#8221; rice the crowd goes wild.  It&#8217;s like I invented stretchy socks or sleeping on mattresses or something.</div>
<div>By the way, this Dirty Rice&#8230; serve it with biscuits.  I mean, you <strong>DO </strong>want people to cheer when you walk by, right?</div>

<p>This is the recipe we&#8217;ve been using for meatloaf lately.  It&#8217;s my favorite meatloaf ever, and I&#8217;m kind of a meatloaf snob.</p>
<p>This is a big recipe and makes 2 full sized meatloaves.  It feeds our whole family one supper and one lunch.</p>
<p>You&#8217;ll need:</p>
<p> </p>
<ul>
<li>3 lbs ground beef</li>
<li>2 lbs of ground pork</li>
<li>2 cups bread crumbs or crushed crackers</li>
<li>2 eggs, beaten</li>
<li>1½ cups milk</li>
<li>½ cup onion flakes (dehydrated chopped onion)</li>
<li>1 Tbsp salt (might use less if you are using cracker crumbs</li>
<li>1 tsp pepper</li>
<li>1 tsp dry mustard</li>
<li>½ tsp sage, rubbed</li>
<li>2 Tbsp parsley</li>
<li>1 tsp thyme</li>
</ul>
<p>Mix it all together, form 2 loaves and lay them in a 10&#215;15 or 2 &#8211; 9 x 13 pans.  Bake @ 350° for 1½ hours, but every oven is different.  Check on it after 1¼ hours.  Transfer it to a serving plate right away, then let it sit for about 10 minutes or so before slicing with a sharp, serrated knife.</p>

			<content:encoded><![CDATA[<p>We  had pizza for supper last night.  Delicious, homemade pizza.  The best pizza I&#8217;ve had in a long, long time.  And I didn&#8217;t touch it until it was ready to eat.</p>

<p>All that to say, I was not inclined to go into the kitchen and make pizza, but we had all the ingredients.  And John was at the men&#8217;s meeting, so we were at liberty to eat stuff he doesn&#8217;t like for supper.  He likes pizza somewhat, but <a href="http://shipfullofpirates.com/2011/04/chicago-style-pizza/">he&#8217;s got a favorite, </a>and that&#8217;s not what we made.</p>
<blockquote><p>I hope that makes sense, another headache is crowding the grammar and vocabulary and general smart parts of my brain&#8230; so I&#8217;m blogging!  Fun-times!</p>

<p>The way I accomplished it was this.  First, a little over 17 years ago I gave birth to a son.  Named him Andrew and proceeded to raise him up into a diligent, responsible person.  Then I told him where all the pizza ingredients were, showed him a recipe in the bread machine book and told him to have at it.  Then I decided it might be nice if I remained awake to field any questions.</p>

			<content:encoded><![CDATA[<p><span style="font-size: 13.3333px;">I made 2 new pie recipes this year. </span></p>
<ol>
<li><span style="font-size: 13.3333px;">Both are very easy to make.  That part is almost a requirement anymore. </span></li>
<li><span style="font-size: 13.3333px;">Both are on a graham cracker crust because I LOVE graham cracker crusts.  Every pie should wear one!</span></li>

<li><span style="font-size: 13.3333px;">And both have sweetened condensed milk as an ingredient because John says that sweetened condensed milk is a food group all to itself! </span></li>
</ol>
<p><span style="font-size: 13.3333px;">He loves that gooey stuff and would eat it with a spoon if I wasn&#8217;t watching.  But I am, so he doesn&#8217;t.  At least that&#8217;s his story.  Maybe I need to start keeping inventory of how many cans I bring into the house and how many I use to create wonderful desserts for him and just see if it all jives.</span></p>
<p>The plan for the big turkey day (not that we ever eat turkey on Thanksgiving, just sayin&#8217;) is to enjoy a ham, some green beans (no, not the casserole, we&#8217;re Thanksgiving rebels) cooked with bacon and onion, and some crockpot potatoes.  The desserts we have lined up are <a href="http://allrecipes.com/Recipe/Pumpkin-Bread/Detail.aspx" target="_self">Pumpkin Bread</a>, <a href="http://allrecipes.com/Recipe/Banana-Caramel-Pie-II/Detail.aspx" target="_blank">Banana Caramel Pie</a>, and <a href="http://allrecipes.com/Recipe/Lemon-Pie-I/Detail.aspx" target="_blank">Lemon Pie</a>.</p>
<p>I modified the recipes a bit to suit me, such as using real whipped cream instead of the garbage in the tubs, and using fewer spices in the pumpkin bread (we leave out the allspice and cloves).</p>
<p>That&#8217;s all.  If you come over tomorrow, bring rolls.  I think everything else is covered.</p>

			<content:encoded><![CDATA[<p>If ya read the previous post about Homemade Cocoa Mix and the comments on that post then you&#8217;ll remember that<a href="http://thebohannonfamily.net/" target="_blank"> Melissa</a> left me a link to a site that is just very rich and deep and full of grand recipes and kitchen advice and I LOVE <strong><a href="http://www.thefamilyhomestead.com/recipes.htm" target="_blank">THE HOMESTEAD KITCHEN</a></strong>!</p>
<p>She pointed me at the <strong><a href="http://www.thefamilyhomestead.com/mixes.htm" target="_blank">Mixes</a></strong> section but I saw the <strong><a href="http://www.thefamilyhomestead.com/makeyourown.htm" target="_blank">Make Your Own </a></strong>category and spent the day there.  Almost.</p>
<p>Found the recipe for this<strong> </strong><a href="http://www.thefamilyhomestead.com/homemadehamburgerhelper.htm" target="_blank"><strong>Homemade Hamburger Helper Mix </strong></a>and had a field day with the possibilities!</p>
<p>I&#8217;ll have to double or at least half again the recipes which means I will end up doing them in a dutch oven/ roaster in the oven instead of the skillet method that we all remember from the 70&#8242;s (or was that the 80&#8242;s?)  (I used boiling water to compensate for the cooking method difference.)</p>
<p>Anywho, the beauty part is that I already had some of the <strong><a href="http://www.thefamilyhomestead.com/homemadehamburgerhelper.htm" target="_blank">Hamburger Helper Mix</a></strong> in my pantry only it was going by the name of <strong><a href="http://suzannemcminn.com/blog/2009/10/03/on-an-early-autumn-weekend/" target="_blank">Condensed Soup Mix</a></strong>.</p>
<p>Remember?  I&#8217;ve been using it in <strong><a href="http://shipfullofpirates.com/2009/10/let-them-eat-beans/" target="_blank">my beans</a></strong> (which Hubs really adores!)</p>
<p>So, instead of Spaghetti, (which I think we&#8217;re all pretty well burned out on) we&#8217;re having Hamburger Potato Casserole.  And using the mix gives all the depth of flavor that usually takes a while to accomplish from &#8220;scratch&#8221;.  And using my handy dandy food processor for the &#8216;taters made quick work of slicing up 8 of those bad boys!</p>
<p>Dinner was in the oven before I knew what was goin&#8217; on!</p>

<p>Well, this recipe is saving all my near-death bananas from the <span style="text-decoration: line-through;">trash can</span> freezer!  And all because it makes up so quick and easy.</p>
<h2>Easy Banana Bread</h2>
<p>Preheat your oven to 350° and spray oil in 2 loaf pans.</p>
<p>You&#8217;ll need:</p>
<ul>
<li>4 cups flour</li>
<li>2 tsp baking powder</li>
<li>1 tsp baking soda</li>
<li>1½ cups sugar</li>
<li>1/3 cup oil (I like to use coconut oil)</li>
<li>4 eggs</li>
<li>4 ripe bananas, sliced (see? easy!  no mash-measure-mess!)</li>
</ul>
<p>Just put everything into a large bowl and mix it together.  Use your mixer if you have one.  Mix it well, then pour it into the two pans.  Bake @ 350° for about 50 minutes.  This makes a delicious loaf!  Very nice for breakfast or even dessert.</p>
