Hamburger Potato Casserole

If ya read the previous post about Homemade Cocoa Mix and the comments on that post then you’ll remember that Melissa left me a link to a site that is just very rich and deep and full of grand recipes and kitchen advice and I LOVE THE HOMESTEAD KITCHEN!

She pointed me at the Mixes section but I saw the Make Your Own category and spent the day there.  Almost.

Found the recipe for this Homemade Hamburger Helper Mix and had a field day with the possibilities!

I’ll have to double or at least half again the recipes which means I will end up doing them in a dutch oven/ roaster in the oven instead of the skillet method that we all remember from the 70’s (or was that the 80’s?)  (I used boiling water to compensate for the cooking method difference.)

Anywho, the beauty part is that I already had some of the Hamburger Helper Mix in my pantry only it was going by the name of Condensed Soup Mix.

Remember?  I’ve been using it in my beans (which Hubs really adores!)

So, instead of Spaghetti, (which I think we’re all pretty well burned out on) we’re having Hamburger Potato Casserole.  And using the mix gives all the depth of flavor that usually takes a while to accomplish from “scratch”.  And using my handy dandy food processor for the ‘taters made quick work of slicing up 8 of those bad boys!

Dinner was in the oven before I knew what was goin’ on!

Easy Banana Bread

I realize that banana bread isn’t difficult, but this one is particularly easy.  I need easy.  I often look at the spotty bananas and think to myself “if we weren’t so dad-gum busy I might make  some banana bread.”

Well, this recipe is saving all my near-death bananas from the trash can freezer!  And all because it makes up so quick and easy.

Easy Banana Bread

Preheat your oven to 350° and spray oil in 2 loaf pans.

You’ll need:

  • 4 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1½ cups sugar
  • 1/3 cup oil (I like to use coconut oil)
  • 4 eggs
  • 4 ripe bananas, sliced (see? easy!  no mash-measure-mess!)

Just put everything into a large bowl and mix it together.  Use your mixer if you have one.  Mix it well, then pour it into the two pans.  Bake @ 350° for about 50 minutes.  This makes a delicious loaf!  Very nice for breakfast or even dessert.
